丹溪红曲酒是我国一个很古老的酒种,是手工酿造的纯天然酒,有700多年的历史。700多年来,义乌人一直以朱丹溪所著《本草衍义补遗》介绍的独特配方制作红曲,自酿红曲酒。为了更好地提升义乌丹溪酒传统的红曲制作工艺,更好地发扬丹溪700多年的红曲养生文化,“义乌红曲传统制作技艺”代表性传承人陈豪锋,先后与国内外的科研院校合作,改进酿造技术,联合开发新产品,既传承了先祖的传统酿造工艺,又融入了现代生物技术,给丹溪红曲酒注入了新的生命。
