草菇(Volvariella volacea)起源于中国,又称中国菇,迄今已有200多年的栽培历史。草菇不仅味道鲜美,而且还具有医疗保健作用。由于草菇是高温菇,是缓和夏季蔬菜短缺的一种食用菇类,所以在世界上草菇的年产量逐年上升。但是草菇同其它菇类及蔬菜、水果有所不同,草菇在低温条件下(10℃以下)菌丝会自溶,不易保存储藏。因此,采收后的保鲜问题为栽培者所关注,然而迄今尚未找到一种成本低、保藏方便的保鲜方法,据目前的文献资料,保藏再好,其保鲜时间也只有72小时,远远不能满足人们在生产、生活中的需要。本研究尝试运用冷冻干燥技术于草菇保鲜的可行性。
