The Hui Muslim food of Xi’an has a long history.As early as the mid-7th century,Muslim businessmen came to Chang’an from Arabia and Persia by land,bringing along with them their local halal food.These Hui ancestors stuck to their previous diet and way of living after settling in Chang’an.Hui ancestors who came by water to live in Guangzhou,Quanzhou,and other areas also brought with them a rich variety of halal food.After the Yuan Dynasty,the Hui diet became richer and more diverse,with distinctive ethnic features,particularly marked by the use of spices.During this period,the diet of Xi’an Huis was rich in variety and Muslim food stalls
