1987年元宵节前夕,鞍山市各饭店出售的元宵,有酸味,有的经水煮后变成杏黄或黄褐色,煮后的元宵粘性较差,群众反应较大,人们不敢食用。为此,我们进行了微生物学检验。检验方法:按国家《食品卫生检验方法》进行。结果:共检验6份样品,样品中均检出了大量的红酵母菌,还检出了一部分细菌,霉菌。形态学特征:在孟加拉红平皿上,菌落呈粉红色,表面光滑、皱褶,有光泽、质地粘稠,有时发硬、横切面扁平,有较宽的隆起,
On the eve of the Lantern Festival in 1987, the Lantern Festival sold in various hotels in Anshan was sour with some turning into apricot or yellow brown after being boiled.
