河豚,历来为「长江三鲜」之首(长江四鲜为:河豚、鲥鱼、刀鱼),盛产于清明前后,味美而质地鲜嫩,营养丰富。早在战国时代的《山海经》中就有关于河豚的记载,至宋时己成为名贵佳肴。长江至江苏镇江一段江面宽阔、水流平缓,正是河豚群?生衍之地,江苏河豚之肥美自古有口皆碑。著名诗句「竹外桃花三两枝,春江水暖鸭先知。蒌蒿满地芦芽短,正是河豚欲上时。」出自美食家苏东坡之手,至今仍脍炙人口,民间曾有「拼死吃河豚」一说,苏大才子甚至用「值得一死」来形容河豚的美味,正是民族民间味蕾的早春认同加之文人墨客的生花妙笔,河豚从一种美食,逐渐形成了一种特色文化。
