文章分析学校食堂的供食构成,从整体上了解学生的膳食结构,讨论目前供食方式存在的问题,从而有针对性地提出膳食干预措施。采用连续3d称重记账法,调查福建某高职院校食堂各类食物的日平均供应量及学生的实际摄入量,分析学生的膳食结构,讨论其营养状况。从该校学生的饮食行为中存在较严重的浪费现象,膳食中动物性食物摄入不足,油脂摄入过多,蔬菜类食物的构成合理,优质蛋白、膳食纤维、矿物质、脂溶性维生素及B族维生素缺乏等状况,可反映出目前高职院校普遍存在着供食方式和内容较单一,学生膳食结构不合理。文中从学校膳食管理、食堂从业人员、学生和家长四方面采取膳食干预措施,以改善学生的膳食营养状况。
This article analyzes the composition of school canteens ’feeding, and on the whole, it can understand the students’ dietary structure and discuss the problems of the current feeding ways so as to propose the dietary interventions pertinently. A continuous 3dweighed accounting method was used to investigate the daily average supply of various kinds of food and the actual intake of students in the canteen of a higher vocational college in Fujian Province. The dietary structure of the students was analyzed and their nutritional status was discussed. There was a serious waste of food behavior among the students in the school. Inadequate intake of animal food in the diet, excessive intake of fat, reasonable composition of vegetable foods, high quality protein, dietary fiber, minerals, fat-soluble vitamins and B vitamins deficiency and other conditions, can reflect the prevalence of higher vocational colleges serving a relatively simple way and content, the students diet structure is unreasonable. The paper takes dietary interventions from four aspects of school diet management, canteen practitioners, students and parents to improve students’ nutritional status.
