目的了解甘肃省居民米面及节令食品中蜡样芽孢杆菌污染状况,为食品安全性风险监测提供依据。方法按《全国食源性致病菌监测网工作手册》中蜡样芽孢杆菌检验标准操作程序操作。结果 2009~2011年甘肃省地方特色米面食品和节令食品中蜡样芽孢杆菌检出率分别为3.33%、15.65%、7.68%,总检出率为8.26%;地方特色米面食品蜡样芽孢杆菌检出率为13.03%,显著高于节令食品的2.20%;第一、四季度蜡样芽孢杆菌检出率显著高于第二、三季度。结论甘肃省地方特色米面食品蜡样芽孢杆菌污染较为严重,提示甘肃省食品监管部门对此类食品应加强监督管理;今后应加强对蜡样芽胞杆菌在食物中的含菌量及产毒状况的监测研究。
Objective To understand the status of Bacillus cereus in rice and seasonal foods in Gansu Province and provide the basis for food safety risk monitoring. Methods According to “National Foodborne Pathogenic Network monitoring manual work,” Bacillus cereus test standard operating procedures. Results The detection rates of Bacillus cereus were 3.33%, 15.65% and 7.68% respectively in Gansu province from 2009 to 2011, with a total detection rate of 8.26%. The local characteristics of rice cereal samples were Bacillus cereus The rate was 13.03%, significantly higher than that of seasonal foods 2.20%. In the first and fourth quarters, the detection rate of Bacillus cereus was significantly higher than the second and third quarters. Conclusions The contamination of cereal-like Bacillus cereus in Gansu Province is more serious, which indicates that the food regulatory authorities in Gansu Province should strengthen the supervision and management of such foodstuffs.
