目的了解某市农贸市场动物性食品重金属污染情况,为食品安全风险评估提供依据。方法参照全国食品污染物监测系统推荐监测项目,对某市农贸市场肉类、蛋类、奶类、水产品四大类17种食品进行铅、镉、汞含量测定。结果共检测136份食品,铅、镉、汞检出率为97.79%、97.66%、77.34%,超标率为5.18%、2.68%、1.79%。铅超标的食品是酱鸭、皮蛋、海水鱼、海虾;镉超标的食品是猪肾、猪肝;汞超标的食品是海水鱼、海虾。结论某市农贸市场动物性食品重金属污染物以铅、镉为主,污染程度较轻,需加强监测。
Objective To understand the heavy metal contamination of animal foods in a certain farmers market and provide the basis for food safety risk assessment. Methods With reference to the recommended monitoring project of food contamination monitoring system in China, the content of lead, cadmium and mercury in four categories of meat, egg, milk and aquatic products in a certain city’s farmers market were determined. Results A total of 136 food samples were detected. The detection rates of lead, cadmium and mercury were 97.79%, 97.66% and 77.34%, respectively, and the exceeding standard rates were 5.18%, 2.68% and 1.79%. Excessive lead food is sauce duck, preserved eggs, sea fish, shrimp; cadmium excessive food is pig kidney, liver; mercury exceeded the standard of food is marine fish, shrimp. Conclusion Heavy metal contaminants in animal food market in a certain city are mainly lead and cadmium, with a relatively low degree of pollution. Monitoring needs to be strengthened.
