目的掌握东安县餐饮业餐饮具消毒状况,为加强餐饮业卫生监督工作提供科学依据。方法按《食(饮)具消毒卫生标准》(GB14734—1994)进行消毒效果检测和评价。结果284家餐饮单位(食堂),抽取1987份样品,消毒合格率为71.66%。县城餐饮单位餐饮具消毒合格率高于乡镇餐饮单位和学校食堂(P<0.01)。量化分级A级餐饮具消毒合格率高于B、C级(P<0.01)。小餐具消毒合格率明显高于大餐具(P<0.01)。结论不断加强餐饮业的卫生监督,把好餐饮具消毒卫生关,严防食物中毒的发生。
Objective To master the disinfection status of catering tableware in Dongan County and provide a scientific basis for strengthening the supervision of catering industry. Methods According to “food (drink) with disinfection health standards” (GB14734-1994) disinfection effect detection and evaluation. Results 284 catering units (canteen), taking 1987 samples, the disinfection pass rate was 71.66%. County catering units tableware disinfection pass rate higher than the township catering units and school canteens (P <0.01). Quantified grade A-class tableware disinfection pass rate was higher than the B, C level (P <0.01). Tableware disinfection pass rate was significantly higher than the tableware (P <0.01). Conclusion Continue to strengthen the health supervision of the catering industry, good food and beverage disinfection and health clearance, to prevent food poisoning.
