摘 要:西瓜果实中含有丰富的番茄红素,对人体保健和疾病预防有着重要的意义。为建立一种快速测定西瓜果实番茄红素含量的方法,利用色差仪测定22份不同倍性西瓜果实颜色系数,同时采用分光光度法测定其番茄红素含量,分析结果表明两者具有极显著高度正相关关系,相关系数为0.849。以此建立西瓜番茄红素含量与果实颜色系数Chroma回归方程,并对29份西瓜果实番茄红素实测值与回归方程估测值进行差异性显著分析,结果表明实测值与估测值之间差异不显著,利用创建的回归方程可快速估测西瓜果实番茄红素含量。因此,利用色差仪可以快速、准确地检测西瓜番茄红素含量。

Abstract: Watermelon(Citrullus lanatus)is one of the few species that accumulate a large amount of lycopene, which is of great significance to human health and disease prevention. In order to establish a method for rapid determination of lycopene content in watermelon fruits, the color coefficients of 22 different ploidy watermelon materials were determined by chromatic meter, and the lycopene content was determined by spectrophotometry. Statistical analysis showed that there was a very significant and highly positive correlation between them, and the correlation coefficient was 0.849. The Chroma regression equation between lycopene content and fruit color coefficient of watermelon was established, and the significant difference between the measured value and the estimated value of lycopene from 29 watermelon materials was analyzed.
