竹笋作为新鲜蔬菜、发酵和罐头的大量消费成为困难。它有丰富的营养成分,并能满足人体所需的食品。龙竹是一种高大竹种,产笋也大,是经济价值高的笋用竹。本文阐述了该竹种的营养成分、鲜笋采收和发酵罐头笋的最终变化。本研究表明鲜笋采收的营养成分比罐头笋丰富。除了整体的营养成分降低外还有在发酵过程中食物规定的纤维含量。新鲜笋除了含有大量的营养元素,如氨基酸、蛋白、碳水化合物、脂肪和纤维,还有维生素和矿物质元素,如钙、铁、钾和磷。含水量也比罐头笋高。从总体研究发现,新鲜笋的营养成分比罐头笋丰富,是一种值得推荐的食用笋。
Bamboo shoots as fresh vegetables, fermented and canned bulk consumption become difficult. It is rich in nutrients and can satisfy the body’s food needs. Dragon bamboo is a tall bamboo species, bamboo shoots are also large, bamboo shoots with high economic value. This article describes the nutritional content of bamboo species, fresh shoots and fermented canned bamboo shoot final changes. This study shows that fresh shoots harvest nutrients than canned bamboo shoots rich. In addition to reducing overall nutrient content, there are food-specific fiber contents in the fermentation process. In addition to fresh bamboo shoots contain a large number of nutrients, such as amino acids, proteins, carbohydrates, fats and fibers, but also vitamins and minerals such as calcium, iron, potassium and phosphorus. Water content is higher than canned bamboo shoots. From the overall study found that the nutritional content of fresh shoots than canned bamboo shoots is a recommended consumption of bamboo shoots.
