菜豆是家庭、食堂、饭店受欢迎的蔬菜之一。菜豆的贮藏保鲜是人们关注的问题,也是解决贮运中的难题,提高经济效益的大问题。研究表明:通宜的贮藏温度,是控制菜豆贮藏中锈斑和腐烂的重要前提。观察发现,8℃是抑制锈斑发生的临界温度,低于此临界温度,温度与锈斑呈高度负相关系。在此临界温度以上,温度与锈斑发生不再呈现相关,而与腐烂呈高度正相关。因此8~10℃是控制锈斑和腐烂的适宜贮藏温度。二氧化碳过量积累是导致菜豆锈斑发生的主要因素,锈斑普遍严重发生的CO_2临界值是2%。菜豆在贮藏中对乙烯不敏感,
Bean is a family, canteen, restaurant one of the popular vegetables. Storage and preservation of kidney beans is a concern for people, but also to solve the problems in storage and transportation, improve economic efficiency of the big problem. The research shows that the storage temperature of Tongyi is an important prerequisite to control the rust and decay of bean in storage. The observation shows that 8 ℃ is the critical temperature for inhibiting the occurrence of rust. Below this critical temperature, the temperature shows a highly negative correlation with the rust.
