目的了解2007-2008年潢川县生产和市售糕点的卫生状况,为制定管理措施提供依据。方法随机抽取糕点制做和市售蛋糕、面包、饼类三类食品,按照GB4789-2003进行微生物质量指标检测。结果 2007-2008年共检测糕点食品276份,总超标率为23.55%,其中超标率分别为菌落总数10.14%,大肠菌群9.78%。霉菌17.75%,致病菌未检出。霉菌计数的超标率高于菌落总数和大肠菌群(P<0.01)。结论潢川县糕点行业卫生质量显著提高但还存在一些问题,应加强糕点食品监督管理。
Objective To understand the sanitary status of the production and commercial cakes in Huangchuan County from 2007 to 2008, and provide the basis for the formulation of management measures. Methods randomly selected cakes made and marketed cakes, breads, cakes, three kinds of food, in accordance with GB4789-2003 microbial quality indicators detection. Results A total of 276 samples of cakes were detected during 2007-2008, with the total exceeding standard rate of 23.55%. The over-standard rates were 10.14% of the total number of colonies and 9.78% of the coliform bacteria respectively. 17.75% molds, pathogens were not detected. The over-standard rate of mold count was higher than the total number of colonies and coliform (P <0.01). Conclusion Huangchuan County, the quality of the pastry industry significantly improved health but there are still some problems, should be strengthened supervision and management of cakes and pastries.
