《红楼梦》中的袭人,因着探春起诗社,忘请史湘云,于是想着拿碟子盛东西与史湘云送去,以便通知。这碟子乃是缠丝白玛瑙碟子,送的东西是大观园里新结的果子:红菱、鸡头和桂花糖蒸新栗粉糕。细品之,袭人虽不识字,却是懂得器物之美与四季养生的学问。玛瑙为白,菱角和鸡头为黑,有黑白反衬之美;玛瑙为山中石,红菱与鸡头为水中果,两者搭配,有木石呼应之说。而史湘云虽贵为侯门之女,但自幼无父母,在家做不得主,且又常常熬夜做针线,一定元气亏损。菱角、鸡头、板栗皆有补益中气,增强体力,抵抗疲劳的功效,在仲秋时节进补,最宜。可见,袭人的审美和养生都做得很到位。美食须得美器,且遵从四时之序,尽可能保存食物的全部营养,这是中华饮食文化的精髓,浙江菜在这些方面做得堪称完美。
