[目的]加强餐饮服务业的监管,找出关键控制环节,有效预防食物中毒事件的发生。[方法]对莱芜市餐饮服务业1999~2008年食物中毒情况进行分析。[结果]1999~2008年莱芜市餐饮业累计发生食物中毒31起,中毒301人,死亡1人。其中,集体食堂发生2起、中毒131人,餐饮服务单位发生11起、中毒74人,家庭聚餐发生14起、中毒77人,死亡1人;第三季度发生11起,中毒122人,死亡1人;农村发生22起,中毒196人,死亡1人;细菌性食物中毒12起、中毒176人,化学性食物中毒17起,中毒118人(其中亚硝酸盐中毒10起、中毒101人),动植物性食物中毒2起、中毒7人、死亡1人;中毒的食品为肉及肉制品的21起,中毒199人。[结论]莱芜市餐饮业食物中毒以家庭聚餐、餐饮服务业为多,农村较多见,中毒的食源以肉及肉制品为主。
[Objective] To strengthen the supervision of catering service industry, find out the key control links and effectively prevent food poisoning incidents. [Method] The food poisoning situation of catering service in 1999 ~ 2008 in Laiwu City was analyzed. [Result] 31 food poisoning occurred in the catering industry in Laiwu City from 1999 to 2008, 301 were poisoned and 1 died. Among them, there were 2 collective canteens, 131 poisoning, 11 catering service units, 74 poisoning, 14 family dinners, 77 poisoning and 1 death; 11 cases in the third quarter with 122 poisoning and 1 death There were 22 people in rural areas, 196 were poisoned and 1 was killed. There were 12 bacterial food poisonings, 176 poisonings, 17 chemical food poisonings, 118 poisonings (10 for nitrite poisoning and 101 for poisoning) Animal and plant food poisoning 2, 7 people were poisoned, 1 were killed; 21 food poisoning of meat and meat products, poisoning 199 people. [Conclusion] The food poisoning in catering industry in Laiwu City was dominated by family dinners, catering services and more in rural areas. The main sources of poisoning were meat and meat products.
