金钻凤梨为台湾优质凤梨品种,营养好、品质佳,为消费者所喜爱,但其采后容易褪绿衰老,温度是凤梨贮藏保鲜的主要影响因素。为研究确定凤梨最适贮藏温度,试验将采后金钻凤梨分别贮藏于温度9,19,27℃条件下,进行定期取样和品质测定。结果表明,9℃下凤梨果实质量损失率一直在4%以下,而27℃时高达10%;9℃贮藏的凤梨的硬度、可溶性固形物下降速度显著慢于其他处理,并能维持较高的可滴定酸和VC含量。试验结果表明,9℃是金钻凤梨的最适贮藏温度。
Diamond Dried Pineapple is a high-quality pineapple variety in Taiwan. It has good nutrition and good quality, which is favored by consumers. However, it is easy to fade and senesce after harvesting. The temperature is the main factor affecting pineapple preservation. In order to study and determine the optimum storage temperature of pineapple, the diamondback pineapples were stored at 9, 19, and 27 ℃, respectively, for sampling and quality determination. The results showed that the fruit loss rate of pineapple at 9 ℃ was less than 4%, while it was as high as 10% at 27 ℃. The hardness and soluble solids content of pineapple stored at 9 ℃ were significantly slower than those of other treatments and maintained high Titratable acid and VC content. The experimental results show that 9 ℃ is the optimum storage temperature for diamond-bored pineapple.
