为了解 2 0 0 2年广州市东山区市售糕点的卫生状况 ,为今后更好地做好糕点的卫生监督管理提供依据。我们对广州市东山区内的 14 3间糕点销售单位随机抽取了糕点样品 1693份 ,按有关食品卫生检验标准进行了检测。结果显示 2 0 0 2年广州市东山区市售糕点合格率为 93 .86%。湿性糕点合格率为 5 8.7% ,奶油水果类糕点合格率为 62 .5 % ,干性糕点合格率为 96.3 %。第一至四季度糕点合格率分别为 95 .7%、93 .8%、92 .1%和 97.3 %。其中 872份样品理化 (砷、铅、酸价、过氧化值 )指标合格率为 10 0 %。
In order to understand the sanitary status of the commercial cakes in Dongshan District of Guangzhou City in 2002, it provides the basis for better supervision and management of cakes in the future. We randomly sampled 1693 sweets samples from 14 3 cakes selling units in Dongshan District of Guangzhou City and tested them according to the food hygiene inspection standards. The results showed that in 2002, the passing rate of pastry in Dongshan District of Guangzhou was 93.86%. The passing rate of wet pastry was 57.7%, the passing rate of butter and pastry was 62.5%, and the passing rate of dry pastry was 96.3%. Pastry pass rates for the first to fourth quarters were 95.7%, 93.8%, 92.1% and 97.3% respectively. Among them, 872 samples of physical and chemical (arsenic, lead, acid value, peroxide value) index pass rate of 10%.
