The bright yellow, orange, and red colors of many fruits andflowers are the result of accumulating carotenoids in a specialized type of plastids, the chromoplasts (Fraser and Bramley,2004).Besides this ecological function, carotenoids exert a vital role in photosynthesis by preventing destructive photooxidation of chlorophylls and other cellular components and by contributing to the light-harvesting process.
