目的 :了解兰州战区城市驻军食堂厨具消毒现状 ,为厨具消毒与卫生管理提供依据。方法 :抽查 4 0个单位的食堂厨具及炊事员手进行卫生学检测 ,方法采用大肠菌快速检测纸片法进行。结果 :共检测样品 4类 4 70份 ,总合格率为 81.2 8% ,高于以往的报道 ,各单位之间无差异。炊事员手合格率为 92 .6 9% ,熟菜刀为 6 6 .6 7%。采用化学消毒的单位厨具合格率高于物理消毒法的单位。结论 :各单位对公用厨具的清洗、消毒工作比较重视 ,爱国卫生月综合治理成效显著 ,但也有部分单位厨具消毒操作不规范 ,应加强连队厨具的卫生管理及消毒技术指导。
Objective: To understand the status quo disinfection of garrison canteens in the urban theater in Lanzhou, and to provide the basis for the disinfection and hygiene management of kitchenware. Methods: 40 units of canteen kitchen utensils and cooks hand hygiene test, the method of rapid detection of coliforms paper method. Results: A total of 4 70 samples in 4 categories were tested with a total pass rate of 81.28%, higher than the previous reports. There was no difference among the various units. Cook’s pass rate was 92.69%, while the kitchen knife was 6.66.7%. The chemical disinfection of the unit kitchenware pass rate higher than the physical disinfection unit. Conclusion: All units pay more attention to the cleaning and disinfection of common kitchen utensils, and have achieved remarkable results in comprehensive treatment of patriotic sanitary wares. However, some units do not regulate the disinfection operation of kitchen utensils. Technical guidance on sanitary management and disinfection of kitchen utensils should be strengthened.
