膳食制度是指把全天的食物定时、定质、定量地分配给食用者的一种制度。国内外众多营养学家对于一般人群的膳食制度曾进行过详尽的研究,但是中年脑力劳动者比较一般人群有其生理特征及工作特点,所以研究他们的膳食制度仍有必要。中年脑力劳动者年龄在三十五岁至五十岁之间,各项生理功能逐渐下降,是心血管病,癌症等疾病的好发年龄阶段;他们以脑力劳动为主,而肢体活动较少,工作时间的分布一般为上午四个小时,下午三至四小时,晚上二至四小时,并且有午睡习惯。由于这些特征,为他们设计的膳食制度要力求达到提高健康水平,保护挖掘智力,防治好发疾病的目的。
