素菜起源于寺院,以后逐渐发展到民间。素食以其丰富的营养价值、鲜美的滋味、特殊的食疗功能以及低廉的价位,受到人们的青睐。寺庙素食以豆制品、面筋、三菇、蔬菜、笋为主要原料,辅以木耳、银耳、竹荪、猴头等,经常食用确可延年益寿。而不少素菜的名称和色泽形态模仿荤菜,经过精工细做,往往惟妙惟肖。因此,素菜可以配制成规格较高的全素筵席。
Vegetarian originated in the monastery, and later gradually developed into folk. Vegetarian with its rich nutritional value, delicious taste, special therapeutic functions and low price, by the people of all ages. Temple vegetarian soybeans, gluten, mushrooms, vegetables, bamboo shoots as the main raw material, supplemented by fungus, Tremella, Dictyophora, Hericium, regular consumption can indeed longevity. The name and color of many vegetarian dishes imitate meat dishes, fine workmanship, often vivid. Therefore, vegetarian dishes can be formulated into a higher-standard vegan feast.
