中国黄酒是国之瑰宝,堪为国粹。2004年12月,根据中国科技大学和美国宾夕法尼亚大学对河南舞阳贾湖出土的陶器进行研究分析,联合研究成果证明:9000年前的贾湖人已掌握原始的酿酒技术,开始酿酒,其成分主要是稻米、山楂、蜂蜜、葡萄等。为此,专家断定中国以谷物酿酒至少有9000年的历史。这是中国发酵酒成为世界上最为古老酒种的又一例证。福建的红曲黄酒,也称红曲酒、红酒。历史上属于中国古时所特有的发酵米酒范畴,历来被列入中国黄酒之列,是中国黄酒红曲酿酒典型的、独具风格特征的品种。
