目的掌握餐饮企业的餐饮具卫生状况,预防食源性疾病的发生,为就餐者提供安全的饮食环境。方法对106家大中型餐饮企业的餐具采用GB/14934-94测定大肠菌群,进行分析。结果大中型餐饮企业餐具合格率为97.7%。讨论卫生行政部门应加强餐饮业的卫生监督,严格餐具消毒制度;同时努力提高从业人员的卫生素质,减少由此可能引发的食源性疾病的爆发,保证人民群众的身体健康。
Objective To understand the sanitary status of catering establishments, prevent the occurrence of foodborne diseases and provide a safe eating environment for diners. Methods The tableware of 106 large and medium-sized catering enterprises adopted the method of GB / 14934-94 to determine coliforms and analyze them. Results Large and medium-sized catering enterprises tableware pass rate of 97.7%. Discussion Health administrative departments should strengthen the health supervision of the catering industry, strict tableware disinfection system; the same time efforts to improve the health of employees, reduce the possible eruption of food-borne diseases and ensure the health of the people.
