当前,四季豆陆续上市。有的院校曾接连发生两起吃四季豆后中毒、发病达一百二十多人。常于进食贮藏过久或炒煮不够熟透的菜豆而引起中毒。四季豆中含皂素对消化道粘膜有强烈刺激性、引起局部充血、肿胀及出血性炎症。也能破坏红细胞引起溶血症状。另一种有毒物质可能为植物血球凝集素,具有凝血作用,并引起剧烈的呕吐反应。
