[目的]评价在学校食堂实施食品卫生监督量化分级管理的效果,为进一步在学校食堂推行和完善食品卫生监督量化分级管理提出建议。[方法]对2003~2008年利津县在所有学校食堂实施食品卫生监督量化分级管理工作进行总结。[结果]实施食品卫生监督量化分级管理5年的2008年与实施前的2003年比较,学校食堂评定为A级、B级者所占比例由0.00%和0.00%增加至9.76%和14.63%(P<0.01),评定为C级者所占比例由82.35%减少至75.61%(P<0.05);食堂食品从业人员健康证持证率、卫生知识考试合格率,由66.45%、53.54%提高到100.00%、95.01%(P<0.01);学校食堂餐具消毒合格率由42.42%提高到75.00%(P<0.01)。[结论]实施食品卫生监督量化分级管理后,学校食堂食品卫生水平明显提高。
[Objective] To evaluate the effect of quantitative and hierarchical management of food hygiene supervision in school canteens, and to make recommendations for further implementation of the quantitative and hierarchical management of food hygiene supervision in school canteens. [Method] The paper summarizes the quantitative and hierarchical management of food hygiene supervision in all school canteens in Lijin County from 2003 to 2008. [Results] Compared with the pre-implementation 2003 in 2008, the school canteens were assessed as Class A in the quantitative and hierarchical management of food hygiene supervision by 5 years and the proportion of Class B patients increased from 0.00% and 0.00% to 9.76% and 14.63% respectively P <0.01), and the proportion of those rated as C level decreased from 82.35% to 75.61% (P <0.05). The pass rate of health certificate for health workers in canteen and the pass rate of health knowledge examination increased from 66.45% and 53.54% to 100.00% and 95.01% respectively (P <0.01). The pass rate of school canteen tableware disinfection increased from 42.42% to 75.00% (P <0.01). [Conclusion] After implementing the quantitative and hierarchical management of food hygiene supervision, the food hygiene level of school canteens increased significantly.
