目的:查明本起食物中毒的病因,对分离的病原菌进行表型和毒力基因的检测、鉴定,为今后预防和控制类似事件提供借鉴。方法:采集患者和厨师的粪便或肛拭子、冷餐间刀和砧板凃抹物、冷菜成品,按照国家标准和文献报道的方法进行病原菌的分离,对检出的副溶血性弧菌(Vibrio parahaem olyticus,Vp)进行生化试验、血清分型、耐药性、毒力(耐热相关溶血素)基因tlh检测,运用脉冲场凝胶电泳(Pu lsed field gelelectrophoresis,PFGE)技术对分离的菌株进行同源性分析。结果:在3例患者和2名厨师的肛拭子以及1件冷菜间刀具涂抹物中均检出生物学性状和药敏试验一致、带有tlh毒力基因的O4K8血清型Vp,PFGE图谱显示它们为同一克隆。结论:这是一起由厨师携带副溶血性弧菌污染食物和冷餐间加工用具引起的食物中毒事件,确认污染源及病原学鉴定非常重要。
Objective: To identify the etiology of food poisoning, to detect and identify the phenotype and virulence genes of isolated pathogens, and to provide references for the prevention and control of similar events in the future. Methods: Patients and chefs were collected for fecal or anal swab, cold knife and chopping board spreads, cold pickled products, pathogen isolation in accordance with national standards and reported in the literature, detection of Vibrio parahaemolyticus Vibrio parahaemolyticus (Vp)) was used for biochemical tests, serotyping, drug resistance and virulence (heat-related hemolysin) gene tlh detection. The isolated strains were isolated by pulsed field gel electrophoresis (PFGE) Homology analysis was performed. RESULTS: The biochemical traits and drug susceptibility tests were consistent with the results of the antimicrobial susceptibility test in three patients and two chef’s anal swabs and one cold-dish knife smear. The O4K8 serotypes Vp and PFGE with tlh virulence genes They are shown as the same clone. Conclusion: This is a food poisoning incident caused by chefs carrying food contaminated with Vibrio parahaemolyticus and cold meals. It is important to confirm the source of the contamination and the etiological identification.
