一、前言椰菜是十字花科云苔属的二年生甘兰类作物,又名包心菜、洋白菜或甘藍。学名Brassica oleracea var. capitata L.。原产地中海沿岸及小亚细亚地区,现在世界各国均有栽培。我国很早已引种,并在各地培育出适合当地条件的品种。广州栽培椰菜已有卅多年,至抗日战爭以后栽培面积日渐增加,并已选育出适合本市栽培的早椰菜品种。目前在本市栽种的早椰菜主要是本地品种,迟椰菜种籽則全由外省或外国进口供应。椰菜的营养价值很高,每市斤鮮菜含旦白质11.2克,脂肪1.3克,糖4克,粗纤維
