目的了解丰县地区餐具的卫生状况,为食品安全监管提供科学依据。方法用大肠菌群快速纸片法进行采样和检测,按《GB14934-94食(饮)具消毒卫生标准》进行评价。结果 2008—2011年共检测4 533件餐具,合格3 632件,总体合格率为80.1%,餐具合格率呈逐年上升趋势(χ2=21.7,P<0.01);不同规模餐饮单位餐具检测结果差异显著,中型餐馆合格率最高,为95.2%,学校食堂次之为93.7%,学生公寓合格率最低为67.7%(χ2=374.9,P<0.01)。结论丰县餐具卫生合格率总体不高,建议食品安全监管部门加强对小型餐馆和学生公寓餐具卫生监管力度。
Objective To understand the sanitary status of tableware in Fengxian County and provide scientific basis for food safety regulation. Methods Coliform bacteria fast paper method for sampling and testing, according to “GB14934-94 food (drinking) with disinfection health standards” for evaluation. Results A total of 4 533 tableware were tested in 2008-2011, with a total pass rate of 3 632 pieces. The overall pass rate was 80.1%. The passing rate of tableware increased year by year (χ2 = 21.7, P <0.01). Tableware test results of different scale catering units showed significant differences , Medium-sized restaurants with the highest pass rate of 95.2%, school canteens the second was 93.7%, the lowest rate of student apartments was 67.7% (χ2 = 374.9, P <0.01). Conclusion Fengxian tableware health pass rate is generally not high, it is recommended that food safety regulatory authorities to strengthen the small restaurants and student apartments tableware hygiene supervision.
