蒜苔在我国栽培地区广,产量高,采收期集中,要做到周年供应,必须进行贮藏保鲜。贮藏时应注意如下几点: 一、贮藏用蒜苔的质量要求早熟品种易脱水、老化和腐烂,不宜用来贮藏,中、晚熟品种适于中、长期贮藏。凡作为贮藏的蒜苔应有一定成熟度,苔苞未膨大,苔梗基部未纤维化,苔梗长度在250毫米以上,直径不小于5毫米,颜色鲜绿,无破伤和虫害,采收后不宜浸水也不能雨淋。
