目的了解东莞市塘厦镇工厂(企业)、学校集体食堂的卫生状况,为集体食堂食品卫生安全管理提供依据。方法按《广东省集体食堂卫生管理办法》和《广东省学校食堂与学生集体用餐卫生管理办法》规定的内容,对辖区内的工厂(企业)和学校集体食堂进行现场调查和监测。结果共调查228家集体食堂,卫生许可证持证率为58.8%,食堂从业人员健康证、培训证的持证率为76.1%;厨房内卫生设施的合格率为70.6%。学校集体食堂的卫生设施明显优于工厂(2=6.82,P<0.01)。结论塘厦镇部分工厂集体食堂以及无证经营的集体食堂卫生状况较差,存在严重的食品卫生安全隐患,必须加强对这部分集体食堂的卫生安全管理。
Objective To understand the hygienic conditions of Tangxia Town factory (enterprise) and school collective canteens in Dongguan and provide the basis for food hygiene and safety management of collective canteens. Methods According to the provisions of “Measures for the Administration of Collective Canteen Health in Guangdong Province” and “Measures for the Administration of Guangdong Province Canteen and Students’ Collective Dining Health”, on-site investigations and monitoring were conducted on the factories (enterprises) and school collective canteens in the jurisdiction. Results A total of 228 collective canteens were investigated. The health permit rate was 58.8%. The pass rate of health certificate and training certificate for canteen staff was 76.1%. The pass rate of sanitary facilities in the kitchen was 70.6%. The health facilities of school canteens were significantly better than those of factories (2 = 6.82, P <0.01). Conclusion The collective canteens of some factories in Tangxia Town and the collective canteens without a license have poor sanitary conditions and serious hidden dangers in food hygiene and safety. Health and safety management of this part of collective canteens must be strengthened.
