测定2341份我国东北地区大豆品种资源18种氨基酸含量,以谷氨酸最高,平均含量为18.80%;其次是天门冬氨酸为11.43%,限制性氨基酸均在2%以下,胱氨酸>蛋氨酸,其变异系数最大。不同品种分析比较结果:其趋势是蛋氨酸含量最高的品种类型为半栽培大豆,黑色荚;胱氨酸高的为半栽培大豆、黄大豆、亚有限、披针形叶。18种氨基酸含量,不同地区品种间差异均十分显著,并有明显的地区性分布趋势。在南北方向上;天门冬氨酸、谷氨酸、亮氨酸、脯氨酸和精氨酸的分布趋势与蛋白质相同,即中部地区低,南部北部地区高;蛋氮酸、胱氨酸、色氨酸、组氨酸、酪氨酸、丙氨酸、甘氨酸、异亮氨酸、苏氨酸、丝氨酸和赖氨酸与蛋白质分布趋势相反;缬氨酸由北向南增加,苯丙氨酸由北向南减少。在东西方向上,天门冬氨酸、谷氨酸、亮氨酸、丙氨酸和苯丙氨酸分布趋势与蛋白质相同,即东部地区高西部地区低;蛋氨酸、胱氨酸、色氨酸、组氨酸、酪氨酸和缬氨酸与蛋白质分布趋势相反;其他组分,东、西部地区品种间差异不显著。
