近代医学科学研究发现:肥肉中的胆固醇会增高心血管病的发生机会。由于有这一发现,不少人说起吃肥肉,大都“谈虎色变”。人们不敢吃肥肉,主要是怕摄入较多的脂肪,引起身体发胖,血脂升高,影响身体健康。然而,肥肉中含有的脂肪也是人体必不可少的营养素之一。它不仅能维持体温,固定组织,保护内脏,还能调节生理功能和促进脂溶性维生素 A、K、E、D 及胡萝卜素等的吸收、利用。如长期少食脂肪(每天少于50克),就可能会出现脂溶性维生素缺乏,引起视力、凝血、骨骼的正常功能障碍及皮肤病等。肥肉中含有0.3%~0.5%的花生四烯酚,有助于降低血脂,而它在植物油中一般也存在,也就是说,适量进食肥肉,并不会引起血脂增高。
