对富裕县繁荣乡克山病病户、大骨节病病户、病区对照户及非病区对照户进行膳食调查。结果表明,膳食组成与疾病严重流行时期发生明显变化。当时病区主食玉米占90%。现在主食小麦占80%,副食摄入量增加,以动物性食品增加最显著。目前克山病与大骨节病病情明显下降,特别是克山病病情近年已降至历史最低水平,无急型、亚急型病例发生,只存在少量慢型和潜在型病例。尽管如此,但病户与非病户,尤其是克山病病户与非病户的动物性食品、豆类和蔬菜类以及营养素和总热量也显著低于对照组。进一步证实了膳食营养因素与克山病发病关系。
