目的掌握福州市食品污染状况和污染趋势,为食品安全风险评估、标准制(修)订提供监测数据,同时也可以提示食品安全隐患,为食品安全监管提供参考。方法根据《2013年福建省卫生系统食品化学污染物及食源性致病菌监测方案》和《2013年福建省餐饮服务食品安全监督抽检方案》提供的方法进行采样检测。结果 2013年该市食品安全风险监测方案的任务,共有13类常规监测和8类专项监测食品,共775份样本,其中婴幼儿食品合格率为100%,水产品中重金属合格率为95.0%,乳及乳制合格率为100%;餐饮服务食品安全监督抽检和临时性监督任务,共有14类食品,383份样本,其监测结果大部分合格率均为100%。结论该市食品安全形势总体向好,但也发现了一些问题。根据我市的监测数据分析污染物的来源,提出需要加强监督的食品种类以及应采取的控制措施。
Objective To understand the status of food contamination and pollution in Fuzhou and to provide monitoring data for food safety risk assessment and standard system revision as well as potential safety hazards for food and provide reference for food safety regulation. Methods Sampling and testing were conducted according to the methods provided in “2013 Fujian Food Safety and Foodborne Contaminants and Food-borne Pathogenic Bacteria Monitoring Program” and “2013 Fujian Food Service Food Safety Supervision and Sampling Scheme”. Results The task of the food safety risk monitoring program in 2013 included 13 types of routine monitoring and 8 types of special-purpose monitoring food with a total of 775 samples. Among them, the passing rate of infants and children’s food was 100%, the pass rate of heavy metals in aquatic products was 95.0% Milk and milk pass rate of 100%; catering services food safety supervision and sampling and temporary supervision tasks, a total of 14 kinds of food, 383 samples, the monitoring results most of the pass rate was 100%. Conclusion The overall food safety situation in the city is favorable, but some problems have also been found. According to the city’s monitoring data analysis of the sources of pollutants, put forward the need to strengthen supervision of the types of food and control measures to be taken.
