对新疆莎车县扁桃种仁中油脂的含量及其理化性质,脂肪酸及氨基酸组成,含糖量,Se、vB1、vB2、vE含量及11种金属元素含量等进行了较系统的分析测定,并与杏仁、核桃、花生、沙棘等的化学成分进行比较。结果表明,莎车扁桃仁含有丰富的脂肪和蛋白质,不饱和脂肪酸含量占脂肪酸总量的91.8%,18种氨基酸含量为24.13%,必需氨基酸含量为6.827%,高于核桃和鸡蛋的含量。vB1、vB2、vE含量均高于核桃,K、Ca、Mg、Cu、Zn、Mn、Fe等元素含量超过核桃果仁和沙棘毛油中的含量。
The contents of oil, physicochemical properties, fatty acid and amino acid composition, sugar content, Se, vB1, vB2, vE content and 11 kinds of metal elements in almonds of Shache County of Xinjiang were systematically analyzed and determined. And almonds, walnuts, peanuts, sea buckthorn and other chemical components were compared. The results showed that Shache Almond was rich in fat and protein, the content of unsaturated fatty acids accounted for 91.8% of total fatty acids, 18 kinds of amino acids was 24.13%, essential amino acids content was 6.827%, higher than walnut And egg content. The contents of vB1, vB2 and vE were higher than those of walnut, K, Ca, Mg, Cu, Zn, Mn, Fe and other elements in walnut kernel and seabuckthorn oil.
