白菜为菜之王无论南方北方,白菜皆是一种极为平民化、大众化的蔬菜,价廉而物美。碧绿的叶子,洁白的帮子,朴朴素素的色彩,却对比得十分醒目。古人对它有个很高的评价:大淡若味。淡淡的甜,故而你不会吃厌吃腻。除做菜肴外,因性寒,便具有药用价值,李时珍在《本草纲目》中对其颇为推崇。因白菜与寻常百姓有着极密切的关系,又有“清白、耐寒”的外形内质,自古及今,文人和画家喜欢携它入画,以寄托心志。
