High nitrate and amine-rich food intake may result in an increased risk of endogenous formation of carcinogenic N-nitroso compotmds (NOCs),it is feasible to select promising food from common diets to inhibit N-nitrosodimethylamine (NDMA) formation or scavenging nitrite.In this paper,the effect of different cultivars of daylily flowers (cv.Panlonghua,Mengzihua,Baihua,Xiye and Daogan) on the formation of NDMA and nitrite scavenging activities under simulated human gastric juice conditions were studied; in addition,antioxidant activity,total phenolic and flavonoid contents were measured.
