To increase the economical values of fish frame,it was used for fish protein hydrolysate production by conventional fermentation with a fish frame to salt ratio of 4:1.Effect of shrimp cephalothorax and squid viscera at 10 or 20% w/w on the fermentation and quality of hydrolysate wereevaluated.
