Food derived proteases are known to have a central role in inflammatory reactions via activates protease activation receptors (PARs) on various cells types.We investigate in this study the effect of a novel crustacean protease on the up-regulation of PARs in the presence of IgE-receptor activation.Trypsin (PT) from black Tiger prawn (Penaeus monodon) was purified by HPLC/C18 chromatography and activity studied using kymograph.
