穿刺试验测试苹果果实成熟过程中质地品质的研究

  通过质构仪整果穿刺法,探索苹果成熟过程中质地变化及其差异性,并研究寒富、华红、红星、华月、金冠5 个不同苹果品种整果穿刺的质地特性。结果表明:在苹果成熟过程中,5 个苹果品种果实果皮硬度、穿刺果皮做功、最大模量(与果皮脆性有关)、果肉硬度、果肉做功均呈下降趋势,它们是反映果实成熟状态的重要指标。
