　　Polysaccharides from mulberry leaves,one of the main chemical compositons of mulberry,has significant antihyperglycemic activity and lower blood lipid.The conventional solvent extraction (CSE) is a classical extraction of polysaccharides.Ultrasound-assisted extraction (UAE) is a new-style extraction of polysaccharides.Compared with CSE,the advantages of UAE include low energy and solvent consumption,high efficiency and high level of automation.Response surface methodology (RSM) is an effective tool to optimize the extraction process of polysaccharides.
