The stability of the green pigment in greening garlic was studied in this paper,the result showed that the pigment had less stability under light,and ultraviolet radiation had destructive effect on it.The pigment was more stable under acidic conditions than alkalinous conditions,and was better at below 200C.It was more stable in oxidant than in reductant.Fe3+,Fe2+,Cu2+ were destructive to the pigment,and K+,Ca2+,Zn2+,Mg2+ had protective effect.
