Polysaccharides are of importance in foods where they are major constituents,forming the bulk of all food consumed by humans and being essential for the maintenance of life and good health.The considerably growing interest in polysaccharides is due to their numerous applications,such as hydrocolloids to modify product texture,thickeners,films,packaging,gelling agent,emulsifiers,and stabilizers,involving various fields,e.g.,not only foods,but also pharmaceuticals,cosmetics,textiles,and biomedicals.
