  Various strategies have been employed to enhance starch property, including thermal processing, chemical modification.The application of high hydrostatic pressure (HHP) may be a complementary, synergistic, or an additive starch enhancement technique.While most current applications of HHP are in starch processing, over 25 starches had been investigated by HHP, which can induce gelatinization and modification of some starches.Different starch responds differently to high pressure depending on the pressure range, starch source, pressurization temperature and time, different solvent and starch concentration.
