通过甲酸溶液提取和固相萃取净化浓缩裹粉水产品中的丙烯酰胺,建立了液相色谱串联质谱(HPLC/MS/MS)检测裹粉水产品丙烯酰胺的方法,并研究了温度和pH等因素影响美拉德反应产生丙烯酰胺的影响.结果表明,该检测方法在20-3000 μ g/L范围内线性良好,r2>0.99,检出限为10 u g/kg,定量限为30 u g/kg,回收率在94.3%~105.4%,满足裹粉水产品中丙烯酰胺的检测.

本研究采用SYSLG32-Ⅱ系列挤压膨化机对鱼糜、木薯淀粉、小麦粉、棕榈油、泡打粉、大豆分离蛋白、碳酸钙等混合原料进行挤压膨化,生产鱼糜挤压膨化产品。通过不同物料组分配比变化,研究了其对产品特性的影响。结果表明,各组分对产品特性有显著影响:随着鱼糜添加量的增大,产品膨化率下降,容积密度上升,膨化产品颜色褐变程度加深,硬度增大;较低的油脂含量能增加产品孔隙率,降低产品硬度及破碎总功;添加泡打粉、大豆
