The image of peanuts is changing,from an energy-dense food to one,beneficial for health,due to compositional profile,and functional components,including their phenolic compounds.Peanut kernels are reported to contain the potent antioxidant stilbenes,resveratrol and its glycoside,piceid,produced in response to biotic and abiotic challenges,and associated with prevention of cancer,and cardiovascular and Alzheimers disease.A technology using size reduction,UV and ultrasound treatments increased resveratrol in peanuts,up to 12-fold that in red wine; total phenolics (TP) and antioxidant capacity (AOC) increased by up to 132% and 281%,respectively.
