It is not clear whether microbial inactivation by PEF is caused by the mechanical damage of the membrane or injury on cell functions or alteration of cellular biochemical substances.In the present study, Saccharomyces cerevisiae was selected to investigate the injury of microorganism induced by pulsed electric fields (PEF).Firstly, two different PEF treatments were carried out.The proteins extracted from Saccharomyces cerevisiae were subjected to PEF treatment.Saccharomyces cerevisiae were treated by the same PEF treatment and then released their proteins.
