Partially defatted peanut flour is a versatile food ingredient that can act as a flavoring agent or as a protein supplement.It is made directly from the peanut cake after oil pressing and retains the characteristic peanut flavor in its residual fat, which is typically 5-15%.Peanut flour can be used to partially substitute durum wheat flour for many food formulations.The two flours have nutritionally complementary proteins, resulting in a product with improved protein quality.
