Since Dr.Rikimaru HAYASHI has suggested in 1987 to introduce high hydrostatic pressure (HHP) treatment in real food processing,R&D on HHP food processing have been intensively carried out in Japan.In 1990 HHP-treated jams were commercialized in Japan as the first HHP foods.After that,within about two decades,HHP food processing was applied to various agricultural produce and food,and some HHP foods were further commercialized:HHP-pasteurized citrus juice,HHP-processed rice pack,HHP-shucked oyster flesh,and so forth.
