Based on the digital chromatic theory,the correlation between chromatic value and fat acid value (FAV) was established by using guaiacol treatment.A digital image system was developed to determine the freshness of aged rice.The results showed that digital chromatic method had no significant difference with titration method on accuracy (P >0.05),however,the precision of digital chromatic method,with the standard deviations of ranged samples below 2mgKOH/100g,were much higher than that of titration method.Meanwhile,significant correlation exist between the determining data of the two method during 17.08mgKOH /100g and 32.28 mgKOH100g (P<0.05).
